WHAT TO DO if your pressure canner STOPS ROCKING mid-cooking!!!

What does it mean when your pressure canner gets to pressure, is rocking steadily and then stops after about an hour?

I had this experience last week while making bone broth. I couldn't find good information online to help me troubleshoot the problem, so I am sharing here with the hope it helps someone.

If the pot stops rocking steadily and the heat is turned up to the maximum, it means you've run out of water, and the contents are about to burn. Not realizing this, I continued to increase the heat, which resulted in a severe burn and ruined the valuable bone broth.

Note: the reason I ran out of water is that the steam escape was not tightened sufficiently and was letting steam leak around the base instead of just through the pipe where the weights sit. Something to check each time, I guess, or tighten well....live and learn!
